This simple summer salad is fresh and flavorful and highlights the bounty of the SFC Farmers’ Markets. Serve it as a first course or for a light lunch, and swap it out with other seasonal ingredients to eat it throughout the year.
Serves 2
Ingredients:
- 1 fennel bulb, sliced in half and then thinly sliced
- 1 avocado, diced
- 2 small peaches or one large peach, sliced
- ¼ cup basil leaves, cut into thin strips
- ¼ cup fennel fronds, chopped
- Half a lemon
- 1 tbs olive oil
- Salt to taste
- Pepper to taste
Instructions
Add fennel, avocado, and peaches to a bowl and toss lightly
Sprinkle chopped basil and fennel fronds on top
Just before serving, top with a few squeezes of lemon, a drizzle of olive oil, and a sprinkle of salt and pepper
